This easy AIP chicken recipe has only 3 ingredients and takes just 10 minutes to make! Your whole family will love these crispy and flavorful AIP BBQ Chicken Fritters. They're also dairy free, egg free, nut free, paleo, and Whole30 compliant. You can enjoy it as a snack, lunch, dinner, appetizer, or even breakfast. The best AIP chicken recipe EVER!
Combine shredded chicken breast, AIP BBQ sauce, and salt in a bowl.
Add flour to a large plate and spread into an even layer.
Add oil to a large pan and heat over medium-high heat until shimmering.
Using about 2 tablespoons of the chicken breast mixture, form a ball and then flatten into a circular patty with your hands.
Dip both sides of the chicken patty into the flour. Place on a clean plate.
Repeat with remaining chicken breast muxture. You should end up with 8 fritters.
Carefully place each fritter into the oil making sure they don't touch.
Cook 2 minutes on each side. Remove hot fritters onto a paper towel lined plate and allow the excess oil to absorb.
Serve hot with extra sauce on the side for dipping. Enjoy!

I usually shred the chicken breast off of a whole rotisserie chicken for this recipe. You can also use leftover chicken breast or pulled chicken.
I like using coconut oil for this recipe because it gives the chicken fritters a slight "coconut-y" taste. If you'd prefer a more neutral taste, you can use olive oil or avocado oil instead. You can also try using lard.
If you are paleo or Whole30 and can tolerate nightshades, feel free to use any compliant BBQ sauce you want! My favorites are this one or this other one here.
You can use this same basic chicken fritter recipe with other sauces to create different flavors. Some of my favorites of Paleo and Whole30 are compliant buffalo sauce, terriyaki sauce, sriracha, or tomato sauce. For AIP you can try, no tomato sauce or this tasty AIP terriyaki sauce!
Double the recipe and freeze the leftovers! Makes a great easy AIP snack or meal on busy weekdays. You can re-heat the chicken fritters in a pan with a little oil, the oven, or the microwave.
